I invite you to try the quiche with spinach I prepared tonight. It's a recipe that is very forgiving, in that you can add or remove ingredients according to your taste, by adding this and that to spinach. I used ham, parmesan, sausage, ricotta and a beaten yolk, then seasoned with salt and pepper.
So after frying olive oil with a garlic and sausage, add spinach and let them cook for about 10 minutes. Cool for 5 minutes, then add ricotta cheese, ham, parmesan and mix everything with the yolk. Then fill the quiche, place the egg white on top and bake it at 180° for about 30 minutes.
Frozen spinach is okay when you're on a hurry, and can be sostituted by any vegetable too, as well as prepared pastry sheets. The result is a yummy quiche that can also be served at room temperature.
I enjoyed it with a mixed salad and a strong flavoured red wine. And life is a perpetual holiday!
